Dark Chocolate Coconut Brownies
I think these mostly speak for themselves, but if you need some help, I'll translate a few words for you.
They're saying "moist", "dark", "rich", "coconuty", "healthy", "chewy", "delicious" and
"EAT ME". Of course I listened. I'm a good listener.
Dark Chocolate Coconut Brownies
inspired by Fake Food Free {thank you!!!!!}
1/4 cup whole wheat pastry flour
1/4 cup all purpose flour
1/2 tsp baking powder
1/2 tsp salt
1/4 cup cocoa powder
3/4 cup brown sugar
1/2 cup coconut oil {I use LouAnns, found at Walmart}
1/4 cup dark chocolate chips
2 flax eggs {2 Tbsp flax meal mixed with 6 Tbsp water and chilled for 15 minutes}
1/3 cup dark chocolate chips
1/2 cup shredded coconut
{optional} sprinkle a little coarse salt on top
Spread coconut oil all over the bottom of an 8x8 glass baking dish. Make the flax eggs by combining the flax meal and water and chilling in the fridge for 15 minutes. Melt {microwave works, or a double boiler} the 1/4 cup chocolate chips and coconut oil together. Let cool. Mix together the flour, baking powder, salt, cocoa powder and brown sugar.
Get your oven ready -- preheat to 350 degrees F. Once the flax eggs have set and the melted coconut oil and chocolate mixture is cool, mix these together. Then add to the dry ingredients and stir together thoroughly. It will be pretty gummy, just keep working it together.
Add the chocolate chips and coconut and pour mixture into the prepared baking dish. Sprinkle with coarse salt if you like and bake for 25-30 minutes. They will still be soft, so let them cool on the counter and then refrigerate until hardened. Enjoy. :)
