There's Hummus Among Us
Being vegetarian, hummus is one of my favorite sources of protein. This recipe is easy peasy and super yummy. I love it inside a pita with chunks of cucumber, tomato and feta. THE best.
My husband engineered this recipe, making ten gallons or so for his cousin's wedding. It's great as a veggie dip too.


Simple Homemade Hummus
I give my husband all the credit
First Step {night before}: soak three cups of dry garbanzos overnight in a large bowl.
Second Step {next day}: Drain the soaked garbanzos and rinse, then place in a large saucepan and add water {enough to cover}. Add salt to the water and bring to a boil, then simmer on medium heat for an hour or two.
3 cups dry garbanzos
enough water to cover them, you may need to add a bit more as they boil
2 tsp salt
Third Step {after they are cooked}: Add the following ingredients to your blender in order:
2-4 cloves of garlic {pulse the blade to chop these up a bit}
cooked garbanzos from above, drained (or 5 cups of canned garbanzos, drained)
1 tsp salt
2/3 cup olive oil
1/3 cup lemon juice (fresh or from a bottle)
1 cup water
Blend until smooth. Serve with a sprinkle of paprika.
