oatmeal pumpkin chocolate chip cookies
These cookies have become a bit of a problem.
They are too good.
The daddy sneaks one before a meal, hoping nobody will see.
Of course, the littlest dooga sees him and the cookie crumbs and begins to beg.
How can we have different rules for grownups than for kids?
So we've been eating cookies before meals.
Just once or twice.
And the other times mommy and daddy do a better job at sneaking.
I did just a few things to healthify this recipe, so we could eat more of them.
Substituted ww flour for one cup of white.
Reduced the white sugar by 1/4 cup.
And used 3/4 of a cup of coconut oil instead of a cup of butter.
Me thinks the changes are just about right.
Oatmeal Pumpkin Chocolate Chip Cookies
inspired by Family Fresh Meals
1 cup all purpose flour
1 cup ww flour
1 tsp baking soda
1 tsp cinnamon
1 tsp allspice
1/2 tsp salt
1 cup brown sugar
3/4 cup white sugar
3/4 cup coconut oil
1 egg or 1/4 cup applesauce
1 cup pumpkin puree
1 tbsp pure vanilla extract
2 cups old fashioned oats
1 cup dark chocolate chips
mix dry ingredients together
cream coconut oil and sugar together with a mixer
add egg, vanilla and pumpkin puree and mix thoroughly
add to dry ingredients and stir well
stir in oats and chocolate chips
place in medium globs on a parchment paper covered cookie sheet
bake at 350 degrees for 16 minutes
let cool before removing from baking sheet
