Dark Chocolate Banana Muffins
We love love love these muffins. I have made them three or four or maybe five times now and each time it has been an all out battle to get photos before the little monkeys grabbing hands get in the frame.
They are moist. They are gooey. They are chocolatey. And they are totally healthy. Just check out the ingredient list and come back at me with a high five. You're gonna LOVE these.
Chocolate Banana Muffins
inspired by a friend's recipe and made even better!
1/2 cup white flour
1/2 cup ww pastry flour
1/2 tsp baking soda
1/4 cup cocoa powder
1/3 cup flax meal
1/2 tsp salt
1 tsp cinnamon
3/4 cup brown sugar
1 mashed banana
1/4 cup applesauce
1/4 cup olive oil
3/4 cup soymilk
1 tsp vanilla
1 cup chocolate chips {I like Hershey's Dark}
Combine dry ingredients. Mash banana and add applesauce, oil, milk and vanilla. Mix together thoroughly and then add to dry ingredients. Stir gently, add chocolate chips. Spoon into greased muffin cups and bake at 350 degrees for 20 minutes. Makes 12 muffins.
