Feta Ciabatta Sandwiches
We went to a birthday party a few years ago where a friend had made these for everyone. I ate more than my share and begged her for the recipe. Cause these are really incredible. Tangy and vegetably and feta-y. :) And they aren't hard to make! Let me show you.
Feta Ciabatta Sandwiches

1 zucchini
1 yellow squash
1/2 onion, diced
1 red pepper
1/2 cup vegenaise {or mayonnaise}
1/2 tsp garlic granules
1 tsp lemon juice
1/4 cup feta cheese, crumbled
4 ciabatta sandwich breads {Walmart has good ones!}
First, cut up your veggies, sprinkle them with salt and just a bit of olive oil, and place them in a baking dish. Bake in your oven at 400 degrees for 20-25 minutes, stirring a couple times.
Mix together your mayonnaise, garlic and lemon juice. Spread this mixture on both sides of your bread, cover one side with feta and broil in the oven for just a couple of minutes, until the edges are brown.
Spread roasted veggies on the other half of the ciabatta {that doesn't have feta}, then press the two sides together to make a delicious hot sandwich!
