Apple Cinnamon Muffins




Apple Cinnamon Muffins

2 cups all purpose flour
1 cup whole wheat flour
4 tsp baking powder
1 tsp salt
1/2 cup brown sugar
1 tbsp cinnamon
1 tsp nutmeg
1/2 cup vegetable oil
2 tbsp coconut oil, melted
1 cup applesauce
1 cup soy milk
2 apples, chopped tiny
Preheat oven to 400 degrees. Mix dry ingredients together. Combine wet ingredients, then mix wet and dry together carefully with the chopped apples. Don't over-mix. Bake at 400 degrees for 20-25 minutes. Makes 18-20 really yummy muffins.
