Baking Snickerdoodles

It's a recipe that I fiddled with a bit to try to make it healthier. I'm experimenting for an upcoming cookie exchange party.
1 1/4 cups sugar
3/4 cups butter (try vegetable oil or coconut oil next time)
2 eggs (think it would work with one egg?)
2 cups ww flour
3/4 cups white flour
1 tsp baking soda
1/4 salt
2 T white sugar
2 tsp cinnamon
In a mixing bowl, cream sugar and butter until fluffy. Add egg; beat well. Stir together flours, soda, and salt; beat into creamed mixture.
In a small bowl, combine 2 tablespoons sugar and cinnamon. Shape dough into walnut sized balls, and roll in cinnamon sugar. Place 2 inches apart on ungreased baking sheets.
Bake at 400 degrees F for 8 to 10 minutes. Cookies will puff up and flatten as they bake. Cool on wire racks.
