Sleeping and Baking

Doing our best to end the day on a cheerful note.

Ezra has been CRYING his little heart out all afternoon -- having trouble sleeping due to multiple factors (coughing, stuffy nose, constipated, over-tired, hungry). I've been using my scientific powers of elimination to try to solve his problems. Sometimes more successful than others.

He finally went into a deeper sleep around 6pm, allowing Peter and I to do some baking in the kitchen.

We started with Raspberry Chocolate Scones. I couldn't find the dark chocolate chips *sad face* so these have semi-sweet chips. Peter indulged in frozen raspberries. Such a treat!

Next, I (Peter was paying more attention to his yoghurt/raspberry concoction by now) tried a vegan version -- Lemon Poppy Scones. Lots of lemon zest and juice.

Time to taste-test!!

Raspberry-chocolate gets an 8 out of 10 -- the texture isn't quite as flaky as I've experienced in the past. Maybe I mixed these too much. Also, I'm missing the flavor of the dark chocolate. These didn't hold their shape in the oven...flowed together. That's a pain.


Lemon-poppyseed gets a 6 out of 10 -- they are decent, don't get me wrong, but the texture is a bit odd and again, they all ran together making one big scone. hmmm I wonder why?


I might try these again, with variations. I like the flavors!
