Meals on a Monday
You know how it feels to always have to one-up yourself, right? Or maybe that's just me.

I'm at a point where I feel like everything needs to be better -- my photography, my blogging, my parenting, my adventurousness, my quilting speed. My food options. But really -- this is crippling. I need to simply focus on doing my best. :)

I'm at a point where I feel like everything needs to be better -- my photography, my blogging, my parenting, my adventurousness, my quilting speed. My food options. But really -- this is crippling. I need to simply focus on doing my best. :)
This week -- FRUGAL food options. Pantry cooking. Produce drawer dump. Minimal grocery shopping.
And maybe some PEACHES.
We'll probably soak some garbanzos, make hummus and use up the pita bread, and then make Chickpea Sweet Potato Curry. We'll use up tomatoes and zucchini from the garden in a stir-fry with rice. You might see some Roasted Cauliflower with rice on our table as well. Cilantro and Spinach Pesto will make another appearance, on pasta, with the leftover hunk of Romano.
A little cornbread and applesauce. Plenty of fresh fruit.
And then bring on the peaches:
Peach Pecan Muffins from The Little Girl's Guide to Sugar and Spice, and Peach Crisp from The Fresh Fridge.
Deliciousness.
