Honey Walnut Banana Bread
inspired by Picture the Recipe
3 very ripe bananas, mashed
1/2 cup vegetable oil
1/2 cup honey
1/3 cup brown sugar
1/2 teaspoon vanilla
2 eggs
3/4 cup all purpose flour
1/2 cup ww pastry flour
1/2 cup quick oats
1/4 teaspoon baking soda
1 teaspoon baking powder
1/3 teaspoon cinnamon
1/4 teaspoon salt
1 cup chopped walnuts
Preheat your oven to 350 degrees F. Prepare a loaf pan by greasing it lightly and dusting it with flour. Mash the bananas and add the oil, honey, brown sugar, vanilla, and eggs. Mix the dry ingredients together, minus the walnuts and then combine with the wet ingredients. Mix gently. Add 3/4 cup chopped walnuts, saving the last 1/4 cup for on top of the loaf.
Pour the batter into your loaf pan and sprinkle the rest of the walnuts on top. Bake at 350 degrees for 40-45 minutes or until a toothpick comes out clean. Remove from pan and let cool before slicing. Makes one loaf.
